Правила

Действия нужно проводить последовательно.

  1. Подготовить тяван к приготовлению чая. Для этого нужно залить кипятком и немного взбить венчиком, чтобы прогреть чашку равномерно. Вытереть насухо.
  2. Насыпать необходимое количество чая для одной порции, залить нужным количеством воды.
  3. При помощи венчика совершать движения вверх-вниз, чтобы получилась паста. В зависимости от скорости взбивания может появится пена.
  4. Когда порошок полностью растворен, можно добавить подсластитель.
  5. Кипяченое молоко остудить до температуры 80 градусов и взбить до состояния пены.

Ratio (Matcha to Water to Milk):

To make the perfect matcha green tea latte with almond milk, I use the following ratio: 1 teaspoon matcha powder to ½ cup of hot water. Then I add ¾ cup of unsweetened almond milk.

That is key to creating a full-bodied almond milk matcha latte that is neither too strong nor too weak.

Keep in mind that the quality of your matcha matters – not only for achieving a smoother beverage, but also for a less bitter taste. That means no sugary sweetener will be required to make our beverage taste good! Ingredients

  • 1 teaspoon matcha green tea powder
  • 2 tablespoons very hot water but not boiling, 180 degrees F. (see note)
  • 1 tablespoon maple syrup
  • 1 cup oat milk

Instructions

  • Put matcha powder in a 2-cup measuring cup, a frothing pitcher, or a large narrow bowl. Be sure your container is large enough so the mixture can foam to its full potential. Use a spoon to mix the matcha, hot water and maple syrup into a smooth paste without any lumps. (Some afficionados sift their matcha before adding water prevent any lumps.)
  • Heat the oat milk to just below boiling, either in a saucepan stovetop or in a microwave oven. Pour ¼ cup of the hot milk into the matcha mixture and pour the remaining ¾ cup milk in your coffee mug or cup of choice.
  • Insert the milk frother into the matcha mixture and give it a good whir, 30 seconds or so, until the mixture foams to about double in volume. Immediately pour over the foam into the hot milk in the mug and serve. If the green foam loses volume, and it does fairly quickly, just give the foam another whir with the frother.

Notes

  • Use water below boiling temperature—boiling water can burn the delicate tea and make it bitter.
  • This recipe makes a large frothy cupful. If you don’t want to drink it all in one sitting, you can refrigerate the extra matcha latte and reheat and re-froth later.

Choosing the Best Matcha

Matcha Grade

Like teas and coffees, the best latte’s come from the best sources. When just learning about how to make a vegan matcha latte, it can be a little overwhelming. There are different grades and brands of matcha. The first tip is to avoid food grade and go for a ceremonial grade. Food grade is for cooking (like cookies or baked goods) and has a stronger taste. I’d recommend going with ceremonial grade matcha since it’s meant for drinking. Yes, it might cost a little bit more, but if you want to enjoy an amazing tasting latte, I’d highly recommend it.

Matcha Brands

After choosing the grade, make sure to select a reputable brand. The brands I’ve tried and loved are:

Rishi Barista Matcha: I was so pleased to find this Matcha, as it is the most vibrant green, is very smooth and flavorful. It’s honestly my new go-to as it’s organic, & very affordable. It comes in a beautiful large bag and has lasted me months without losing its quality.

Ippodo Matcha – Balanced: Holy moly this blend has to be one of the top choices. Their matcha is so soft and smooth with absolutely delicious taste. It was the closet Matcha brand I could find that tasted like a jar of matcha that one of my best friends brought me from a small farm in Japan.  I was so stoked to find something similar with such a potent quality. I’d highly recommend this brand!

Mizuba Daily Matcha: I found this brand while going to Portola Coffee Roasters in Costa Mesa, CA. They serve matcha lattes and I was lucky enough, that they sell this brand in-store. I also read about the brand from Alison Wu. They are a small company out of Portland, OR and I love their story! They source their matcha from a small farm in Japan. This blend is more of my everyday Matcha as it is incredibly smooth and yummy with no compromise in flavor. Also a great price point!

Drink it Warm, Not Hot!

The biggest tip to making any delicious matcha latte is to heat up the water to the right temperature, making sure it is not too hot. Shoot for a temperature between 155 and 160 degrees F. Do NOT boil the water as you would for tea, or you will extract unwanted, bitter flavors. When I make my almond milk matcha latte I use a Breville Electric Kettle where I can digitally set the temperature. This ensures I get all of the delicious flavor notes without any bitterness. With an electric kettle, it gets heated to the right temperature every time!

After the water is heated, sift the matcha to make sure all of the clumps are out. Here is the bamboo whisk I use to sift the matcha. Using the whisk and sifting the matcha will result in a much smoother drink!

Ingredients

Hot Water: Used to whisk the matcha powder before adding it to the latte. Water heated to 170-175ºF–not boiling– is key to extracting the most flavor from the matcha powder without compromising the delicate taste.

Oat Milk: Choose unsweetened oat milk to better control the overall sweetness levels of the drink while providing a creamy base. Alternatively, you can use another plant-based milk like unsweetened almond, soy, or coconut milk. 

Matcha Powder: I suggest using ceremonial-grade matcha powder for the best quality and bright green color. A few brands I recommend are Aiya Matcha, Matchabar, and Encha Matcha. For a less expensive option, you can use culinary-grade matcha. It is important to note that it will have a lighter green hue and a slightly more bitter taste. Here are a few options: Encha Matcha and Matcha Love.

Sweetener: A touch of maple syrup or agave adds a natural sweetness to balance the earthy notes of the matcha. You can omit this ingredient if you want a stronger matcha flavor. Alternatively, sweeten it with monk fruit sweetener for a low-sugar, low-carb option. 

It’s Not a Latte Without Milk

This is where the creativity starts! When making a vegan matcha latte, milk choice adds those subtle, delicious flavor notes and adds to the richness of the drink. Being personally dairy-free, I find that an almond milk matcha latte is one of my favorites! A coconut milk matcha latte is a second runner-up, but I also like to get creative and make my own nut or seed-based milk.

I’ve been able to be even more creative and try a variety of different nut and seed combinations with ease, ever since I got an Almond Cow (use STEPHANIE for $15 off). One of my personal favorites is a pumpkin seed and almond milk that’s oh so smooth and creamy! It works great in my morning vegan matcha lattes.

Almond Milk Matcha Latte

Now when getting that frothy goodness in the latte, I’d highly recommend this Breville Milk Cafe Frother. It allows you to froth any milk with ease! When making my vegan matcha lattes, I make sure that they are extra frothy. However, if you don’t have the milk cafe frother, you can use a whisk or handheld milk frother. It will really enhance the final elixir!

Do I have to sift the matcha?

It’s a good thing to note that matcha technically doesn’t dissolve in water. That’s why the sifting and whisking process is important for a smooth tea. It’ll help avoid any grainy, lumpy chunks, or even a chalky texture.

How do I turn this into an iced matcha latte?

Make the warm matcha tea as stated above, then chill it in the fridge. Pour that into a glass with ice cubes, followed by the frothy milk and sweetener. Give it all a stir and your iced matcha is ready. Just be mindful to use a liquid sweetener as a grainy sugar won’t dissolve in cold liquid.

What is the difference between matcha and green tea?

Green tea is steeped in hot water, giving you about 75% of its nutrients. Whereas matcha powder allows you to consume the entire leaf with all its shining health benefits.   • Use quality matcha. Your matcha latte with oat milk will only be as good as the quality of the matcha you choose. Invest in a high-quality ceremonial-grade matcha with a vibrant green color and a fresh, grassy aroma for the smoothest latte experience. 
  • Properly heat the water. Heat the water until just before boiling and use a thermometer to test the temperature. If the water is too hot, it can scorch the matcha and give it a burnt taste.
  • Sift the matcha powder. Don’t skip this step! Sifting the powder with a mesh strainer before mixing it with water helps remove any clumps and ensures a smooth, silky texture.
  • Perfect the whisking technique. Use a traditional bamboo whisk or a handheld electric frother to whisk the matcha and water together, using a vigorous zigzag motion to create a frothy top layer.

  • 6 oz Almond Milk

  • 1 Tsp Tenzo organic matcha powder

  • 1 Tsp honey

  • 2 oz hot water

Directions for Matcha Almond Milk Latte:

  1. Whisk 2 scoops (one tsp) of Matcha Green Tea with 2 oz of hot (but not boiling) water to make a green tea shot.

  2. Once the matcha green tea powder and water are completely blended, add the honey and whisk again thoroughly until the honey completely dissolves

  3. If you have an espresso machine with a steam frother, use it! Otherwise, heat the almond milk to a low simmer on the stove. When the almond milk is hot, whisk thoroughly to create some foam.

Making Matcha Latte Without a Frother

This will work well even if you don’t have a matcha whisk and bowl and a milk frother. Cool, right?

Many recipes out there call for a matcha whisk and bowl to make this hot beverage. Fortunately, ours doesn’t! I actually don’t have any of those things yet I managed to make a smooth and creamy tea by simply using a small fine sieve, a regular whisk, and a large cup.

The result was a tea free of clumps. I started by sieving the matcha powder, which helps eliminate most of the clumps. It works the same way as sieving cocoa powder or flour. You will notice after sieving the powder that clumpy residues of the powder remain in the sieve while the fine product/powder goes into the cup.

Then I used a regular whisk to mix a small amount of hot water with the powder. No W-motion was needed, as required by some when using a matcha whisk. A vigorous circular motion made with a regular whisk was just as effective to break up clumps and get a nice foamy top.

If your teacup has a flat bottom, that’s even better, because it will make it easier to mix all the powder in the bottom and get rid of any clumps. If not, use a good-size bowl with a flat bottom.

Although you can simply pour the warm milk into the cup after mixing the matcha powder with the water, I prefer to froth the milk to make it foamy. I don’t have an electric milk frother so I used a personal blender for smoothies to create the foam. A whisk can also create some foam!

As you can see, it is easy-peasy and no special equipment is required. You can make an almond milk matcha latte like a pro using what you have at home!

We at Tenzo Tea thought we’d break down some of the main reasons for you.

Energy: Matcha Vs Espresso

The caffeine in our matcha almond milk latte comes from the matcha, which is finely ground powdered green tea. The caffeine in a regular latte comes from espresso, which is specially processed coffee beans. As far as energy goes, matcha caffeine beats coffee caffeine on all levels! How can this be? Well, matcha green tea is special because it contains a special “feel good” amino acid called L-theanine that works with caffeine to reduce stress and anxiety while promoting a relaxed state that doesn’t make you feel tired. Unlike regular coffee, matcha caffeine gives you clean focused energy without any jitters, headaches, or added anxiety. A 2 gram serving (1 tsp) of our Matcha Premium green tea yields about 70 mg of caffeine while one shot of espresso (the amount used in an 8 oz latte) has about 77 mg of caffeine. Thus you get around the same amount of energy from our matcha almond milk latte as you would from a regular latte without the negative side effects. Nutrients: Almond vs Dairy

It’s not uncommon for doctors to tell their patients to cut out dairy as the first step to getting a little healthier. Even though regular milk (and cheese, mmmm cheese) is absolutely delicious, its high in fat, cholesterol and hard to digest. Thankfully almond milk acts as the perfect replacement for regular dairy milk in our matcha almond milk latte. Made of just ground almonds and water it’s naturally slightly sweet and creamy. Plus its lower in calories; almond milk has 40 calories per cup, while regular, dairy milk has 103 calories per cup. Almond milk has some other health benefits* including that it:

  • Contains no saturated fats or cholesterol
  • Is a good source of Vitamins A and D
  • Is naturally lactose free making it easier to digest than regular milk

We like to swap out regular milk for a non dairy option when making matcha recipes here at Tenzo Tea. This is because evidence from as far back as 2008 has demonstrated that dairy might inhibit your body’s* intake of the beneficial nutrients and antioxidants found in matcha green tea. Matcha green tea is full of antioxidants, especially the powerful antioxidant EGCg which helps to fight free radicals and ward off disease. Scientists are finding that if you eat your antioxidants with dairy, you can say adieu to all the disease-prohibiting and health-promoting properties offered by these natural chemical compounds. Apparently dairy contains a protein called casein which binds to the beneficial plant compounds known as flavonols in tea. (These compounds are also referred to by specific names such as catechins and are the building blocks of antioxidants.) And, according to some scientists, the binding may make it tough for the body to absorb the flavonols and get the health benefits. 

How to Make Almond Milk Matcha Latte

  1. Place a small, fine sieve over a small flat-bottomed bowl or a large teacup. Sieve the matcha powder (a few residues or clumps will remain in the sieve).

2. Then pour a small amount of hot water into the bowl or cup.

3. Whisk in either circular motion or W-pattern to break up any clumps. Pour in the remaining hot water and whisk well. If making a large amount of tea, you may use a large bowl with a flat bottom and an electric hand mixer!

4. Whisk in the syrup and taste. Add more if needed!

5. Froth the warm/hot almond milk, using either a clean whisk and separate bowl or a personal blender for smoothies, for about 1 minute or until foamy. Pour it in over the matcha tea to fill the cup.

6. Enjoy!

To make a fantastic cup of this Japanese green tea drink, you’ll need to heed our cooking tips on how to make matcha latte. We’ve tested them to ensure you can make a wholesome beverage that you will love.

How to Whisk Matcha (Smooth And Clump-Free)

Our favourite way to make a matcha latte smooth and clump-free is to use a matcha whisk to sift the green tea powder. The Japanese invented this bamboo whisk (known as a chasen) to break up the lumps in powder while aerating it to get a lovely microfoam texture.

When whisking green tea powder with a bamboo whisk, you want to whisk using a continuous W or M motion. Don’t use circular movements because that will not break up the green tea powder enough. 

Alternatively you can use a regular whisk, an electric milk frother. They will give a similar result but we do notice it’s not as foamy compared to a bamboo whisk.

Our last method to make a matcha latte without a whisk or milk frother is using an empty jar or tumbler.

By adding water and the powder to a jar and shaking it well, we got a foam top and no clumps. However, with the jar-shaking method, you won’t get microfoam froth at the top layer of your matcha. If you like the creaminess of the froth, then opt to use a bamboo whisk or hand whisk.

Iced Green Tea Latte Recipe Tips

While we recommend still using hot water at 80 – 85 degrees celsius to make iced green tea latte, we have seen other recipes say use cold water.

Consider adding ice cubes to this beverage if you are under the summer heat to help quench your thirst.

Having tried both hot and cold water, we do think the hot water helps to bring out the earthy flavour and natural umami of green tea powder more. However, if you don’t like this, then using cold water might be better for you.

Hot Matcha Latte Recipe Tips

If you’re making a hot green tea latte, avoid heating the milk above 70 degrees Celsius or 160 degrees Fahrenheit. If the milk is boiling, the green tea drink turns bitter. 

We typically will only heat the milk up to 50 degrees before we start to froth it. Usually we do this by warming it in the microwave on the lowest heat setting for 30 seconds.

For our recipe, we made a cute cat paw by ending our milk in the centre of the cup. Then, we simply scooped out four small amounts of the remaining milk foam to make cute little toe beans. It’s the easiest way to make matcha latte art and adds a lovely touch to our drink. 

Why is it bitter

Using boiling water to make your hot matcha latte might be intuitive, but you shouldn’t. Excessive heat destroys the taste of green tea powder and makes the drink bitter. The optimal temperature is between 80-85 degrees Celsius or 175 degrees Fahrenheit.

Here’s a quick way to get the desired temperature for the hot water without actually measuring it with a thermometer. 

  1. Boil the water. 
  2. Pour what you need for the drink into a cup.
  3. Pour it again into a second cup. 

The re-pouring will cool the water and make a perfect cup of green tea. Alternatively pour the water into a cup and wait 20-30 seconds.

How To Store

It’s best to drink green tea beverages as soon as possible. You can keep your drink in the fridge for 2-3 days and make sure to gently reheat and stir it thoroughly before drinking. 

Any leftover powder will get bitter if it oxides. Therefore, to properly store this, we recommend putting it in an airtight container in a cool, dark place. Depending on the brand, some brands will recommend you store it in the fridge instead. Heat and humidity can cause the green powder to clump together.

Making it ahead of time

We don’t recommend making matcha latte ahead of time as the water and milk will slowly separate, and you’ll start to see small green particles. Although after a quick stir, there’s no impact on the taste, it doesn’t look aesthetically pleasing. 

If you don’t mind the look of it, you can certainly combine everything and give it a quick mix before serving.
